Thin noodles create a great “wall” when slurping for rich broths to adhere to. We use a high concentration of potassium in the kansui for a very firm noodle.
Straight Sapporo-Style noodles. High in hydration, the Kansui in this noodles has a higher concentration of sodium for a very chewy, not-so-firm noodle.
Our Rye Tokyo noodles build on the balanced, versatile character of our classic Tokyo-style noodle—but with a subtle, earthy upgrade. We’ve added a touch of locally stoneground rye flour, bringing depth, aroma, and a hint of nuttiness to every bite.
