Our Yakisoba noodles are crafted specifically for stir-fried dishes, with just the right balance of chew and tenderness. Made with slightly less kansui than our ramen noodles, they deliver a smooth bite and a clean finish—perfect for absorbing sauces without overpowering them.
Straight Sapporo-Style noodles. High in hydration, the Kansui in this noodles has a higher concentration of sodium for a very chewy, not-so-firm noodle.
Thin noodles create a great “wall” when slurping for rich broths to adhere to. We use a high concentration of potassium in the kansui for a very firm noodle.
Perfect as dipping noodles and broth-less ramen. This noodle has a larger rough “cut” area that is fantastic for thick sauces and dipping broth to adhere to.
