About Komugi

“Komugi” means “wheat” in Japanese. Most of our effort goes into selecting the right flour locally to produce great tasting noodles with the right texture. Finding the right flour for ramen noodles outside of Japan was not an easy task, however, after plenty of trial and error, we found a local mill with just the right flours for us. After so much research about wheat, we decided to call ourselves Komugi as a homage to this ingredient and to remember ourselves of the importance of sourcing the right flour.

We realised that opening a good ramen shop in the UK was not an easy task. First things first you needed fresh, high-quality noodles. There can’t be a good bowl of ramen without good noodles, right?. The options were either spending a fortune in machinery, which requires extra space or to purchase noodles that didn’t live up to expectations. We want to make this process easier.

We love eating ramen and want as many ramen shops in the UK as possible. This is the reason why we decided to open Komugi Noodles. We are chefs that love the craft of making noodles. We’ve left our little pasta machines at home and move to a factory to pursue this great challenge of producing the best ramen noodles in the UK.
